Spinach, Avocado & Grapefruit Salad

 

 

Ingredients:

 

 

1 bag of organic spinach

1 pink grapefruit

1 anise (optional)

1 avocado

 

Dressing:

 

2 tsp of home-made mayonnaise

2 tsp of mustard

2 tablespoons of white vinegar

3 tablespoons of extra-virgin olive oil

Salt (to taste, optional)

Pepper (to taste, optional)

 

 

Rinse the spinach. Place it in a bowl together with the cubed avocado and some thinly sliced anise (optional).

In a small bowl, mix the dressing ingredients; pour on the spinach salad and toss.

Arrange the salad in the middle of the serving dishes.

Peel the grapefruit with a sharp knife, removing also all the white skin. Slice it in round sections and arrange them on the dishes, around the salad.
