Celery and Bean Salad

 

 

 

Ingredients:

 

1 heart of celery

1 red or yellow bell pepper

1 can of organic navy or pinto beans

A handful of pine nuts

 

Dressing:

 

1 tablespoons of balsamic vinegar

3 tablespoons of extra-virgin olive oil

Salt (to taste, optional)

Pepper (to taste, optional)

 

 

Wash the celery stalks and keep only the central, tender ones. Cut them into small pieces.

Do the same with the bell pepper. Rinse the organic beans.

Put these three ingredients, together with the pine nuts, in the serving bowl. In a small bowl, mix the dressing ingredients. Pour the dressing on the salad.

P.S. This salad is tasty, but it might be a little hard to chew. You might want to use less celery and replace it with some organic greens.
