Beet and Goat Cheese Salad
Ingredients:
1 bag of organic mixed greens
1 red or yellow beet (cooked)
Soft goat cheese
A handful of walnuts or pecans
Dressing:
1 tablespoons of balsamic vinegar
3 tablespoons of extra-virgin olive oil
Salt (to taste, optional)
Pepper (to taste, optional)
Rinse the organic mixed greens and arrange them on the serving dishes. Cut the goat cheese in small pieces and slice the beets; dispose these two ingredients on the greens, together with the nuts.
In a small bowl, mix the dressing ingredients. Pour the dressing on the salad.
